I'm looking for an October cruise and prices for the two ships are about the same.
They are each the newest ship from each their cruise line.

Epic will be here for a short time before going to Europe, so this will be our Epic opportunity. We have never been on a NCL cruise before so even though I'm sure we will have a good time, I'm not quite sure how it will compare to Carnival and RCCL.

Carnival Dream is leaving from Port Canaveral which is only about an hour from here, and I'm sure we won't be disappointed on a Carnival cruise.

What would you choose?

My cruises:
Carnival Fantasy 9/7/06 Nassau/Half Moon Cay, Cabin V26, 4 nights
Carnival Inspiration
3/17/07 Grand Cayman/Calica, Cabin R132, 5 nights
Sovereign of The Seas
12/21/07 Nassau/Cococay, Cabin 8568, 3 nights
Carnival Glory
6/14/08 Cozumel/Belize/Roatan/Freeport, Cabin 6481, 7 nights
Carnival Liberty 5/30/09 Ocho Rios/Grand Cayman/Roatan, Cabin 8229, 7 nights
Monarch of The Seas
09/21/09 Nassau/Cococay, Cabin 5529, 4 nights
Majesty of The Seas
06/14/10 Key West/Nassau/Cococay, Cabin 9506, 4 nights
Carnival Legend 10/03/10 Grand Cayman/Cozumel/Roatan/Belize, Cabin 5181, 7 nights
Freedom of the Seas 11/28/10 Labadee, Haiti, Cabin 9489, 4 nights
Carnival Freedom 08/26/2011 Colon/Cozumel/Limon, Cabin 8425, 8 nights
Carnival Sensation 01/15/12 Freeport, Nassau, Cabin E37, 4 nights

I am a Carnival Platinum Cruiser and I would absolutely choose the NCL Epic.  The ship has so many unique things, the entertainment should be outstanding and in my opinion NCL just has a better product than Carnival does right now.

"NCL just has a better product than Carnival does right now."

Are we talking about ship design or overall experience?   If it's the former, I might be tempted to agree with you.   Other lines are outperforming Carnival in ship design.

But have you seen the reviews NCL is pulling right now on Cruise Critic?  I've never seen so many poor reviews for a major cruise line in my life, and most of them are directed at NCL's food and service.   NCL seems to be pursuing a strategy to endow it's main (free) dining rooms with blandtastic food and mediocre service in the hopes its customers will pay $25 per person per night to upgrade their meals in the specialty restaurants.   Great for NCL.  Not so great for its customers.  $25 bucks plus drinks and service charges per person per night is nothing to sneeze at when you can book most cruises for around $75 per day.  Can you say hidden 30-40% increase in fare?

If you're a repeat Carnival customer, you know that you're simply not going to get crappy service on Carnival.   Apparently Carnival's food is now a notch above most other lines too, including NCL and RCCL.  And of course, food is almost always free.

Food isn't the only consideration when choosing a cruise, but my impression is that food is a big minus on NCL right now.

That being the case, I'd take Dream.
